Jan 10 - Food banks help all stay healthy
Many Americans struggle to put food on the table each day. Several of us say to ourselves, "I wish there was something I could do to help."  Well, there is. There are many great programs in the community to help those with food insecurity, but one of these organizations has been well recognized for some time... the food bank. As a registered dietitian, I work to support the Food Bank of Central and Eastern North Carolina, which serves 34 counties locally.
Dec 09 - Combine health, holidays through canning
With the holidays quickly approaching many of us are looking for creative gift ideas.  One idea may be home canned foods. Home canned foods are making a comeback and rightly so, given the current economy. In addition to their obvious nutritional value, canned goods are great way to decorate the kitchen; from colorful chili peppers to pickles, home canned items add a splash of color to the decor.

When talking with my clients and reviewing food recalls, I sometimes hear people say, "I only eat pure foods", or "the other night I had dehydrated meatballs made from nuts." These clients may not obsess over their weight, but they definitely obsess over food.

May 09 - Hydration key to summer fitness
As the temperatures rise outside and we approach summer, it is important to remember to stay hydrated. Dehydration occurs when you lose more fluid then you take in. Fluid is important to maintain normal body processes, such as eliminating waste products in the body, lubricating joints and cushioning organs, aiding in digestion of nutrients, and helping with temperature regulation.  Roughly 70 percent of the adult body is made up of water.

This Easter Sunday, children all over the country will be scouring the landscape in search of pastel colored plastic eggs hidden next to tulips, daffodils and lawn ornaments. The tradition of the Easter egg hunt has been around for years. The egg is a religious and seasonal symbol of rebirth and the “Easter grass” used to line baskets is meant to resemble a bird’s nest. Traditionally, Easter eggs were dyed or painted chicken eggs. Somehow along the way, the tradition has come to include using Cadbury Crème Eggs, Reese’s peanut butter eggs, and various other chocolate eggs, as well as plastic eggs filled with sweets.
Mar 09 - Got milk? Drinking for performance
Want a delicious indulgence that makes a great snack during or after a workout? How about chocolate or strawberry milk. Surprised? Recent findings reported in the Journal of Applied Physiology, Nutrition and Metabolism found that trained cyclists who drank chocolate milk were able to ride 51 percent longer when compared to a group consuming a carbohydrate fluid replacement, and up to 43 percent longer when compared to a group consuming a fluid replacement solution.

As a dietitian, this matter is close to my heart and I understand the uphill battles that many in the United States face each day. The good news is, all of us can make a difference with food security.

As a dietitian, I often hear people say, “Eating healthy is expensive.” I have to agree choosing nutritious food is more expensive than choosing foods that tend to be less nutritious.

Some want the largest pumpkin they can find, others want the long oval pumpkin, some want the ugly pumpkin, the lonely one all by itself in the field. It is one of America’s cultural traditions to include pumpkin in our homes and our meals during October and November.

The “heart” of running season is over and Semper Fit’s Grand Prix series is concluding another successful year.  As we reflect on our 2007 running accomplishments, plan a competitive 2008 or look forward to just “shedding” a few extra holiday pounds, I’d like to discuss the all too common statement that “running is bad for the body”.

We are a society that wants everything larger than the next guy’s or bigger than the original and it’s working.  Even Tic-Tacs are bigger!!!  I guess they’re a calorie and a half now.  This evolution of increasing portion sizes has been termed portion distortion.

For those of you who don’t know, March is National Nutrition Month.  For a dietitian it’s a time to work like a dog, putting together programs and running events, ironically because of the heavy workload, it’s also a difficult time to eat five to nine servings of fruits and vegetables a day, exercise, and drink plenty of fluids, while still getting that necessity of sleep.  It’s also the time when New Year’s resolutions have been “resting” for about a month or so and “beachwear body composition” goals start to come out.
